This is my very first attempt at mushroom growing. I have a bag of coffee grounds that is now, after 2 months, fully colonized by Oyster mushroom mycelium. I don't know what species, but it was cloned from a beech log that fruited after a cold spell here in northern Europe (Holland).
This morning I put it in the fridge to initiate fruiting.

My questions are:

How long should it stay there?
How do different cold spell parameters effect fruiting?
does it need thiamine boosting for good fruiting?
- I was thinking of spraying the lump with dilute beer for thiamine from the yeast or perhaps grinding up a vitamin B tab and dissolving it water, but I dont know what concentration to use.

How should it best be housed while fruiting?
- I was going to put it in an empty plastic fishtank that is standing vertically on one end. The opening would be covered with a clear plastic wrap covered frame that would be openable. The tank would be stood on a cupboard near a window for light.

The bottom of the bag shows more moisture as the brown coffee grounds are pressed up against the plastic and no mycelium is growing there-
Should I take the lump from the bag and stand it on a grill or something that would allow drainage?

Any advice from the knowledgable and wise is appreciated. Thanks in advance,

I wouldn't mess with thiamine. Just try & get good air exchange, & the right temperatures & humidity. In the gallery there is a picture of a plant stand I used for a fruiting chamber. I'm going to modify it by adding a gallon jug of water & an aquarium bubbler for fresh air exchange.
The bag of straw I spawned with the colonized coffee is showing some off colours, same with the other jar of coffee. I think it may be a lost project. I'll be coing some culture work soon & start up a new batch soon, probably no coffee though.

By the way humidifier is handy but not nessesary, you can use any hand sprayer in order to maintain humidity. When I put mushrooms in order to initiate fruiting then instead of switching humidifier I hand spray walls and humidity will rise up to 85% and stay for 12-20hours.
