There is a skiff of snow on the lawn this morning, here, in Nova Scotia. That means I have to wait a while for the mushrooms.

When they start peeking out I shall be waiting for my five favourites:
1. Lactarius deliciosa
2. Boletus edulis
3. Boletus luteus (Slippery Jack)
4.Hydnum repandum
5.Cantharellus cibarius (yellow Chanterelle)

#3, being my absolute favourite.

Morel(Morchella Esculenta
Parasol(Macrolepiota Procera)
Shaggy Ink Cap(Coprinus Comatus)
Cep(Boletus Edulis)
St Georges Mushroom(Calocybe Gambosa)

1. Cantharellus subalbidus
2. Cantharellus cibarius
3. Boletus edulis
4. Hydnum repandum
5. Pleurocybella porrigens

I've found others, but just haven't gotten the courage to try them yet.

My top favs are porcini, yellow and black chanterelles, hedgehogs and shaggy manes! Soon the rains will start and I will be out with my basket. It hasn't rained here since last March and I am getting restless.

Not in any particular order
Morels, Chanterelles yellow & black, Boletes, Shitake.
If I have any luck finding Grifolia or Laetiporus I may have to edit my list.

Well my favourite edible fungi is Macrolepiota Procera- nice nutty taste coupled with the fact that they get quite big- more to eat!!

My favorites after 27 years of hunting mushrooms are,

Fresh Picked:
#1 White Matsutake
#2 Hen-of-the-Woods, Chicken-of-the-Woods
#3 Honey Mushroom, Chanterelles, White - Black Morels
#4 Hygrophrus Russula, Oysters
#5 Shaggy Manes, Puff balls

Dried:
#1 King Bolete
#2 White / Black Morel

Well it seems that most of us agree that shaggys are one of our favourite fungi- i like its distinct taste, certainly a nice addition to the plate!

in no order

shaggy mane
yellow/white chanterelle (i cant really taste a difference)
oyster
lobster
hedghog/sweet polypore

although ive never had a morel before, but from what everyone says about them im sure they will be way up there when i do.

Well shaggys do have a distinctive taste(salty is how I would put it). This year most of my foraying for scientific purposes and have only seen Shaggys a couple of times this year. When I have seen them, they have been in limited numbers as well.
