OK here's my killer mushroom & spinach omlette recipe.

Saute your favourite mushrooms with a bit of onion & garlic
Once mushies are mostly cooked cover with spinach, reduce heat slightly, place lid on pan & wait untill spinach is wilted.
Sprinkle some fresh cut parsely over spinach & mushrooms then add enough beaten eggs to almost cover spinach completely. Eggs should make thier way throughout the mixture. Put lid back on pan & wait till eggs are set. Flip if you feel daring, otherwise season with salt & pepper.
Cover with your cheese of choice, I like sharp cheddar for this, or if I'm in a decadent mood a mix of cheddar or gouda with stilton.
Add a few drops of water down the side of the pan to make steam, turn off heat, put lid back on & wait till cheese is melted.
Serve with light bodied riesling & enjoy.

Just make sure you bring some of that kickass Stilton, or a raw milk farm Cheddar, I had some a while back that was to kill for.

Mature cheddar goes well with Parasols- I havent tried it yet, but it certainly goes well with open cap shop bought mushrooms. I will try cheese covered parasols next year- hopefully!
